Our cottage AKA the University of Plain Living, is surrounded by 40 acres (16ha) of farming land. We are just a couple of kilometres from Beechwood, west of Wauchope in the Hastings Valley on the mid north coast of NSW, Australia. We are living on Biripai Land.

We've been growing garlic here for about ten years now and have some excellent garlic strains as a result. We're starting to get the hang of growing and curing garlic too. It's not always easy but it is rewarding to have fresh garlic through most of the year.

Organic Practices and Lifestyle

We operate a low input farming system, minimise our greenhouse gas emissions and other waste and are continuously improving our soil and management systems. Farming, as we say here, is a "work in progress".

Cattle grazing is controlled to build up soil carbon, protect waterway health, protect cattle from parasites and ensure that cattle always have the best food available. After all, our cattle are the experts in their field.

We have been certified organic for a number of years and we are now satisfied that we do not need to be certified. Our farming practices remain consistent with the organic standard and the proof of our practices is in our produce.

We work hard to produce quality food, rejuvenate our soil and pastures and care for our natural environment. We also have a lot of fun here in the knowledge that producing quality fresh food for local people is an honorable profession.
Natural Grass Fed Organic Beef
We pride ourselves on the production of high quality natural grass-fed beef. It’s got a lot to do with how we care for our animals.

We do everything we can to ensure that our beef is of the highest standard. Our cattle are raised naturally, entirely on pasture and are cared for individually in a small herd.

Expert local butchers age our beef so that you will enjoy a flavour and tenderness that is reminiscent of a time when we weren't all in such a hurry.

Organic Garlic - Our Specialty

The pride of our garlics. Voted the most delicious falvoured pan fried garlic by taste testers at the Hastings Farmers Market. Rosies is a rocambole (french) type of garlic with large, evenly-sized cloves. It is easy and exquisitely delicious to use and, of course, the most sensitive type to grow.

FoodPrints garlic can be found at the Hastings Farmers Market on the fourth saturday in Wauchope and second saturday of the month at Port Macquarie. Harvest begins in October and we usually have garlic available until July.

We still can't decide if there is anything better than our fresh garlic. Be at the Farmers Markets in October or come out to the farm at harvest time to get your fresh green garlic. This is truly special stuff and it's only available at a limited time of the year.
Fresh Natural Vegetables

FoodPrints fresh vegetables can be found at the Hastings Farmers Markets. We grow all sorts of stuff in season including potatoes, carrot, silverbeet, rainbow chard, eggplants, corn, tomatoes, broccoli, cauliflower, cabbage, beetroot, rosellas and a variety of herbs. We like to grow traditional open pollinated varieties and perpetuate the seeds.

Sweet dry pumpkins are the flavour of the month. We named this after Cath's grandfather who reckons it was the best pumpkin he ever ate.

Shallots or French Onions- Look out for these sweet little onions. These are another heirloom variety that have been grown in the Hastings and Manning Valleys since Europeans came here.
