A simple way to save money at the deli is to buy ham etc in bulk when it is on special.
Ask for it to be sliced on a sandwich setting, rather than shaved (it is easier to handle this way.)
Then as soon as you get home separate the meat into serving sizes, say 2 slices, lay flat or at the most in half and freeze each serve in glad wrap.
The cold meat stacks well like this in the freezer.
Then you have cold meat at the ready, simply thaw out in the microwave or in the fridge.
When cold meat such as ham can be on special for $8.99 per kilo instead of up to $15.99 per kilo or more, then you can save quite a bit if you do use a lot of cold meat.
